VitaTop Chocolate Muffin Dupes

So...I tried this recipe for VitaTop muffins and they're pretty darn amazing. Pro is that they're only 100 calories apiece, are low sugar, and are great for when you have a sweets craving. Con is that they use artificial sugar, and also that it's kinda hard to stop at just one. So instead of eating one 300 calorie muffin, you may end up eating three of these :(


TRIPLE CHOCOLATE MUFFINS
Recipe from Dining Dash

Ingredients
  • 1 3/4 cup oats
  • 3 egg whites
  • 3/4 cup unsweetened cocoa
  • 1/2 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1/2 cup plain yogurt
  • 1/2 tsp cream of tartar
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup hot water
  • 1/2 cup baking stevia (I just used ~15 packets of splenda that I stole from Starbucks)
  • 1/2 cup semi-sweet chocolate chips
Directions
  1. Preheat oven to 350 degrees. Line muffin pan with liners. 
  2. In a blender, mix all of the ingredients except for the chocolate chips and blend until smooth
  3. Pour batter into a bowl and stir in half of the chocolate chips, setting the rest aside. Scoop the mixture into prepared pans.
  4. Bake muffins for 10 minutes, then remove from oven and distribute the other half of the chips on top of each muffin. Place back into the oven and bake for an additional 2-5 minutes, checking for doneness with a toothpick. Cool and enjoy :)
